Best. Artichoke. Dip. Ever.


My good friend, Marion, made this dip at a recent party, and Scott and I had to drag ourselves away from the table. It is Heaven in a bowl. Enjoy!

INGREDIENTS

1 can artichoke hearts (not marinated), drained and quartered
1 cup mayonnaise
2 cups grated Parmesan cheese, divided (I've used the italian 3-cheese blend before, and it worked out fine)
1 (8 ounce) package cream cheese, softened
1 (4 ounce) can chopped green chile peppers (or sub in chopped jalapenos for more of a kick)

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).

2. In a medium bowl, mix the artichoke hearts, mayonnaise, 1 cup Parmesan, cream cheese and green chile peppers. Scoop the mixture into a medium baking pan (an 8x8 or something similar will do). Top with the remaining 1 cup of Parmesan.

3. Bake for 25 minutes or until bubbly and slightly browned. Serve warm with tortilla chips (or pita chips).
