This is a recipe that I requested from my cousin. She makes this for all of our family events, and it is SO yummy! Enjoy!
1 sm. pkg imitation crab (if using a lg. pkg, double cream cheese)
1 pkg neufchatel cream cheese
1/2 bunch green onions
1 can sliced water chestnuts
1. Let cream cheese stand in bowl at room temperature for 20 minutes to soften.
2. Chop crab into 1 inch or smaller pieces.
3. Finely chop onions.
4. Chop sliced water chestnuts into smaller pieces.
5. Add all ingredients to cream cheese and fold gently until fully mixed.
6. Refrigerate for 2 hours if possible (overnight is better).
Serve with french bread slices or crackers (my personal favorite is the Pepperidge Farm butter crackers in the shape of a butterfly). It's also good with carrots & celery sticks.
You can use low-fat cream cheese, but it's not as good & can get a little watery.

Wait, what is "imitation" crab? Does that mean this is vegetarian?
ReplyDeleteImitation crab is a crab substitute that is actually made from fish, then processed. It has a different texture and flavor from fresh crab, so it's often used in its place.
